What’s Cooking for FIL Residents with Chef Fran?

What’s better than getting to eat delicious food? Learning how to make it yourself, of course!

Starting this month, Healthy Cafe’s very own Sous Chef, Francesca Thomas, will be offering healthy, simple food preparation cooking classes for the residents of FIL.

Fran focuses on recipes that are both easy to make but also those that promote good health.

In addition to the basics around nutritious food preparation and recipe conventions, Chef Fran goes over proper temperature management, sanitation and, of course, safety.

This new program continues FIL’s integrated wellness concepts, bringing together nutrition, physical wellness, and mindfulness.

What Else is on the Menu at FIL?

It can be daunting creating nutritious meals 3 times a day, 7 days a week and yet that is the task our amazing Healthy Café team of Head Chef Shenika Nichols, Francesca Thomas and John Washington tackle each and every week.

But how do you make sure that what you’re preparing is also satisfying for 60+ varied pallets?

To help the Healthy Cafe team accomplish this, Shenika created a “Food Committee” consisting of 5 residents, who contribute to the planning of our 5-Week Menu Cycle.

The residents and staff review what’s popular on the current menu, discuss favorites that haven’t been included in the past and consider which items they would like to see less of.

The Food Committee has thus become a collective voice for the broader community, ensuring we meet our commitment to being driven by our residents.
